CHAPTER 11: BEANS RECIPES

BARE
Just like rice and yam, beans can be cooked without any added ingredient and can be eaten with white rice.

BEANS PORRIDGE

Ingredients:
Beans
Palm oil
Salt
Seasoning cubes
Onions
Crayfish
pepper

Preparation:
1.Cook the beans, keep adding water till the beans is almost done.
2.Add salt, seasoning cubes, onions, palm oil, pepper and crayfish. You can choose to add dried fish, its optional.
3.Allow to cook. Turn the heat off once the beans is done and the water has almost dried up.
4.Stir and its ready to serve.

Serving:
Serve with sliced onions and Utazi leaf. Chilled zobo or juice.



BEANS AND YAM

Ingredients:
Beans
Yam
Palm oil
Salt
Seasoning cubes
Onions
Crayfish
pepper

Preparation:
1.Cook the beans, keep adding water little by little till the beans is almost done.
2.Peel and cut the yam to your preferred size. Wash and add into the pot of beans and cook together.
3.Add in the ingredients; palm oil, salt, onions, crayfish, seasoning cubes, pepper and continue to cook till all the ingredients has mixed together with the yam and beans.
4.Stir very well and bring down.

Serving:
You can serve with Utazi leaves and onions with chilled drink.


BEANS AND PLANTAIN

Ingredients:
Beans
Plantain
Salt
Seasoning cubes
Palm oil
Onions
Crayfish
Pepper

Preparation:
1.Cook the beans till it’s almost done.
2.Peel and cut the plantain into cubes and add into the pot of beans.
3.Add in all the ingredients
4.Allow to cook, stir, taste, bring down and serve.



BEANS AND RICE

Ingredients:
Beans
Rice
Palm oil/groundnut oil
Tomatoes
Onions
Salt
Seasoning cubes
Crayfish
Pepper
Curry
Thyme
Ginger
Garlic

Preparation:
1.Parboil both rice and beans in a separate pot.
2.If you’re using tomatoes and vegetable oil, fry it and set aside. You can choose to fry the tomatoes with palm oil or just cook with only groundnut oil or palm oil.
3.In a pot, add in the parboiled rice and the parboiled beans on top. My dad would add in a bit of rice and beans and the stew before add into the last batch of rice and beans and the stew on top, just so the ingredients could reach the whole pot of rice and beans. It’s one of his favourite food and he often adds smoked fish or beef.
4.If you are using only palm oil, after adding the whole ingredients (salt, seasoning cubes, onions, crayfish and pepper) and cover to cook, don’t add too much water as beans tend to have more water which comes out the more it cooks.
5.After a while, the water must’ve gone down, stir and turn. Its ready to serve.

Serving:
Serve with any juice.




BEANS WITH BREAD

Some people love to eat porridge beans with bread. The beans is cooked with onions, crayfish, salt, seasoning cubes, pepper and palm oil.




BEANS AND CORN

Ingredients:
Beans
Corn
Salt
Seasoning cues
Pepper
Crayfish
Palm oil

Preparation tips:
Cook the corn and peel from its cob, parboil the beans and set aside, prepare the ingredients.

Preparation:
1.In a pot, add the parboiled beans and corn, add water, you can use the water from cooking the beans.
2.Add in all the ingredients.
3.Allow to cook for a while, then check to see if the corn and the beans are well cooked, check the ingredients, if it is well balanced. Stir and bring down.

Serving:
Serve with any drinks





PAP WITH BEANS
Porridge beans is eaten with pap or custard and it taste heavenly. It is a wonderful combination.
