ARIANA’S SCHEDULE for First Semester- Freshmen Year

Associate in Occupational studies (AOS) in culinary arts and AOS in baking and pastry arts

Double Degree schedule:

MONDAY, WEDNESDAY and FRIDAY schedule (CULINARY ARTS)

8:00am-8:30am — Food Safety

8:30am-9:30am — Professionalism and Life Skills

9:30am-10:00am — Nutrition

10:00am-11:00am — Culinary Math

11:00am-12:30pm — Lunch

12:30pm-1:30pm — Introduction to Gastronomy

1:30pm-2:10pm — Product Knowledge

2:10pm-6:00pm — Culinary Fundamentals- (tasting, kitchen equipment, knife skills, classical vegetable cuts, stock production, thickening agents, soup preparation, grand sauces, timing and multi-tasking, station organization, palate development, culinary French terms, and food costing)

TUESDAY, THURSDAY and SATURDAY schedule (BAKING AND PASTRY ARTS)

8:00am-8:30am — Food Safety

8:30am-9:30am — Professionalism and Life Skills

9:30am-10:00am — Nutrition

10:00am-11:00am — Culinary Math

11:00am-12:30pm — Lunch

12:30pm-1:30pm — Introduction to Gastronomy

1:30pm-2:10pm — Baking Ingredients and Equipment Technology

2:10pm-6:00pm — Baking and Pastry Techniques- (use of hand tools and equipment found in a bakeshop, as well as the exploration of baking and pastry ingredients and their functions, major methods such as creaming, blending, foaming, meringues, pre-cooked, cut-in, lamination, straight dough, custards, frozen desserts, chocolates, and sauces)

Privileges of Double-course students:

1.       Eating in one class per morning and afternoon (since there is no breaks)

2.       Exemption to clubs and organizations

3.       Joining Intramurals is not a requirement

4.       CIA athletics meetings (if involved in any CIA athletics teams) only thrice per month
