Alfred uses his hands a lot whenever he speaks. However, he's also proficient in ASL (American Sign Language) so he unknowingly makes a lot of gestures that mimic what he's saying.
At one point, he started sending secret messages out when he was talking to see who was paying attention. Only Matthieu (Canada) caught on and was highly amused by what his brother was signing as he spoke.
