An individual whom is declared as batshit crazy is certifiably nuts. Completely mad. But did you know that this phrase has its origins in the archaic term of "bats in the belfry."??
Old churches in ye olde England, they have a structure at the top called a belfry, which houses the bells. And of course, bats are extremely sensitive to sound. Therefore they would never inhabit a belfry of an active church where the bells are rung oftentimes.
Occasionally, when a church had been relinquished to nature and many years passed without the bell pullers pulling frantically on that socked rope; bats would eventually come and inhabit the belfry.
So, when somebody said that an individual had "bats in the belfry" it meant that there was "nothing going on upstairs" (as in that person's brain). Hence, to be considered as BATSHIT CRAZY is to take this a step further.
A person who is thusly thought of as batshit crazy is so completely bonkers and lala that not only is their belfry full of bats, but so many bats have been there for so very long that the belfry is coated in an excessive amount of shit. (Also known as guano.) Henceforth known as Batshit.
Ergo; the craziest of crazy people are BATSHIT CRAZY.
