1 medium- sized potato

1 roe ( fish/shellfish eggs)

2 tbsp Mayo

1 tsp olive oil

1 tsp lemon juice

Salt and pepper

1. Wash the potato and wrap it in saran wrap. Microwave for five minutes, it's ready when you can poke a bamboo stick through it.

2. Peel the potato while it's still hot put in a bowl and crushed with a fork.

3. Cut a slit in the middle of the roe and scoop out the inside with a spoon. Pour lemon juice on it and throw away roe skin. If you wrap the cutting board with Saran Wrap, it won't get dirty.

4. Add the roe to the bowl from step 2, along with the Mayo, olive oil and pepper, stir and add salt for taste.

5. By choice you can cut cucumbers or red peppers and lay them on the plate and put the taramasalata in the middle add basil or mint to make it pretty.
