There were a couple of clues that Sam was lying.
1. Sam said that all morning he'd been writing to his aunt, but only two sentences were written. At that time, it was noon, which meant Sam wrote two sentences from early morning until noon. However, when he wrote his address for Gilan and Will, he wrote really quickly, which proves he was also doing something else that morning. Of course, this wasn't enough evidence to prove that Sam stole the jewel, as he could've woken late.
2. When Sam opened the front door to let Gilan in, snow poured down from the roof, indicating that the door hadn't been opened yet. However, when Will opened the back door, no snow poured down, but Sam had said he was inside the 'whole morning'. Which he wasn't, as he came out and in the back door to steal the jewels!
3. The snow outside was smooth with no footprints. Because it was snowing, it shouldn't have been smooth. It only stopped snowing just before Will and Gilan came in (The snow kept pouring down) --> (Luckily it stopped snowing). If Sam hadn't gone outside, the snow outside should've been uneven, and stayed that way. However, it was smooth; which meant Sam had gone out and smoothened out the snow after it stopped snowing, and the snow didn't pile up since. This means that Sam was lying.
Sam got arrested and Ambrose got his emerald back. Ambrose also offered to make two small jewels for the rangers (he was that grateful), which the rangers declined, so he instead bought them a bag of coffee and honey each. Halt was furious and proceeded to go on as many errands as possible in hopes of helping a villager and getting free coffee, to no avail. In the end, he forced Gilan and Will to share.
