Vegan Chocolate Chip Cookie Cake

Ingredients

•1 Flax Egg (1 tbsp of flax seed + 3 tbsp of warm water)
•1 Cup of Almond Butter (room temperature) (I use Barney Butter Vanilla Espresso)
•¾ Cup Coconut Sugar
•¼ Cup of Almond Milk
•1 Cup of Whole Wheat Flour
•½ teaspoon of baking powder
•¼ Teaspoon of Salt
•¾ Cups of Vegan Chocolate Chips (I used Enjoy Life Brand)

Directions

1) Preheat oven to 350ºF
2) In a small bowl whisk together the flax egg, almond butter, coconut sugar and almond milk
In a separate bowl combine flour, baking powder and salt
3) Slowly incorporate the dry and wet mixtures until a dough is formed then fold in the chocolate chips.
4) Grease a 8" circular pyrex cake pan and press cookie dough into pan until it evenly fills the pan
5) Bake in the oven at 350º for 25 minutes or until cooked all the way through
Allow cookie cake to cool before slicing into 8 pieces
