Day 12: Your Breakfast

To be honest with you I can't remember what I had for breakfast. I don't think I ate it.  Since this is the case I'm going to tell you (and show you) the breakfast that I've eaten a couple of times this week.  Be prepared for something awesome and spectacular.  I'll even include the recipe in case you want to give it a go.  (If you do try it let me know if you like it!)

Ok, before I let you in on what I eat for breakfast I need to tell you a story.  Have you ever heard of Crepes?  If you have just know that this is one of my most favorite foods in the ENTIRE world!  I'm seriously thinking of eating some right now!  I love, love, love, love them!  If you don't know what they are I highly suggest that you go and find out RIGHT. THIS. VERY SECOND.   In fact, I give you permission to leave this post and go find some.  Of course, you have to promise to come back.

How do I like to eat them you ask?  I like a slight dusting of powdered sugar on them.  I like them cold, I like them warm, I like them with nothing on them!  I even like them with fresh fruit on them.  No, I don't like syrup, TONS of powdered sugar, or honey on them.  I probably don't like most things that average people put on them.  No whipped up sugar that comes out in a frothy mess...nope, I like them plain and simple.  That being said, my favorite way to eat them is with a tiny bit of powdered sugar on them OR chilled in the fridge.  YUMMY!

With that story being told I need to tell you about my new found breakfast item.  It is called...Roller Coaster Breakfast.  I've made this a couple of times and some of my family members tell me that it tastes like a great big cream puff only without the cream filled center.  I beg to differ.  I think it tastes like a great BIG Crepe!  I am happy to announce that this breakfast is one of my most favorite foods in the entire world!  I love it so, so, so, so, so, so, so much!!!!!!  I love it with a light dusting of powdered sugar OR chilled in the fridge.  I actually want it right now!

With all this new knowledge in your head I will now bestow upon you the recipe for this magnificent food.

**PLEASE NOTE**  I do not like to eat eggs as eggs.  What I mean is...I don't like to fry me up an egg.  I have to have it hidden away in some sort of food.  Don't get me wrong, I love the flavor of eggs, I just really can't stand the texture.  This yummy breakfast item tastes a lot like eggs but doesn't have that yucky egg texture.  **END OF NOTE**

Recipe for Roller Coaster Breakfast (Again, please let me know if you try this out)

*After baking, this looks like a roller coaster*

6 eggs

1 cup all-purpose flour

1/2 teaspoon salt

1 cup milk

2 Tablespoons melted better

Confectioners' sugar (What I was calling powdered sugar)

Preheat oven to 450 degrees F. Butter a 9 x 13-inch pan and put into freezer while mixing the batter.  (Special note from coldfireplace:  I don't butter my pan, I lightly spray my pan with that spray stuff...gosh, I can't remember the name.  Anyways, I don't load my pan up with butter but I do have a light coating of oil...maybe it's called Pam Cooking Spray?)

Beat eggs with a fork.  Slowly add the flour and mix well.  Add salt, milk and melted butter.  Pour into cold pan and bake for 18 to 20 minutes; then lower temperature to 350 degrees F and cook for an additional 10 minutes. (Another special note: When I lower the temperature I don't take the pan from the over.  I simply lower the temperature and set the time for 10 more minutes.  It doesn't burn when I do it)

Sprinkle with confectioners' sugar and serve with butter and syrup. (Last Special Note: Remember how I said I like to eat it....no syrup for me.  BUT that does not mean that you can drench it with syrup, and other sugary options.)

So TA-DA!  That's it!  I know, it looks rather plain and egg-ish but it's really good.  Give it a go!
