It's a week before the grand opening of tasty treats
I've been extremely busy running around town getting stuff ready for the big Day. So today l'm holding a meeting with my new team, l gave everyone time to get the bakery
I needed some laid down a few ground rules. The tee shirts hats and hair nets, have came in the other day
Stef has done all the inventory. We have a computer
Software that generates when we're running low on supplies, l like to keep things in order. All my recipes are locked up in a compress file on my personal laptop
There are a few new ones l stored on the new computer
Most of the recipes. I know by heart, l'm waiting for everybody to get here on time l told them 4:30 pm
I sent everyone a text message, this is a important team meeting, they already know l mean business. It's 3:45 pm
Stef went to pick up the kids from school, l know next week is gonna be crazy with the bakery opening up
They need to be on there A game. Attendance is a must
I had to explain to the guys that l wanted them not to have their pants hanging down low, this is a upscale bakery
I requested the crew to get black khakis pants. No jeans
And shoes with rubber soles at the bottom, they have a couple of days to get everything together. I wanted everybody to be on the same page, this is a team effort
I made a employee handbook that covers mostly things we're we will be discussing today. The ladies know that can't wear their nails long they have to keep them trimmed up nicely, hi Ms. Lena how are you Emory comes in the door. I'm good and you Lena replied, me and Stef agree to have Emory be the assistant manager. She needs to be trained for that position, l'm gonna have to personal train her myself. I wanted someone who was trustworthy honest, reliable and who would my eyes and ears
If l'm away handling business outside the bakery
She's older mature and has a lot of experience. Chris comes in and speaks to us. Ms. Lena do we get paid for coming to this meeting, Chris asks me. No you don't

This is a fast paced business, you're gonna have to be able to work as a team. And the rest depends on you
Because we're going to be getting customers who wanna order certain things from the menu on that board over on the wall, for instance a woman comes in and wants a muffin. But we have all kinds of muffins, we have gluten free, which one would you offer her. Lena questions
Give her a breif run down of all the ones we care, Chris said. Exactly Lena responds, you might need to read up on all the types of things we sell so you won't get confused
We have pastries, cakes muffins, pies and the list goes on
Everything is made from scratch. I don't use box cake mix
All my cakes are made with flour, Lena explains
Abby comes in and greets each of us. I will teach each of you, the ins and out of working at bakery. It can be intense, as long as you follow directions and listen
I asked everyone to be respected towards one another
I've been doing this for a long time. I have studied under some of the best chefs in the country, l study culinary arts in London. I learned how to make all kinds of stuff
Not just pastries, l can design wedding cakes and make them. I learnt how to bake at ten years old
My mother brought me a easy bake oven one year
instead of me using what she purchased for me
I ended up using the big oven. The baby one wasn't challenging enough for, in school l wanted to take home economics and sewing. So when I graduated from high school, l got accepted to the culinary institute of London
It was hard work, l lived there for five years
Got master's degree in culinary arts and cake decorating
Once l finished. I knew that I wanted to open up my own bakery, so I moved to San Francisco find a run down restaurant got it fixed up and open it up and name it sweet tooth. I have people working for me
That l train, so it's important to get it all
And if you realize that this is not your passion
in becoming a pastry chef one day, this isn't the job for you. It takes dedication to make it in this business
Anytime your dealing with food, you need to wash your hands. to make sure your work station clean up before moving on to another task, wearing a gloves is must
When serving customers. The thing with wearing hair nets, so your hair doesn't get in people's food
I know it's a lot to grasped at one time
Lastly attendance is a must. You see how l asked everyone to be here at 4:30 and you guys showed up before the appropriate time, that tells me you understand order and direction. Your other team mates choose to do something else, instead of being here for this meeting. They must thought l was joking. When it comes to the state of my business, l'm ten steps ahead of all you guys.
I don't want to hear excuses, if you can get up and go to the club on Friday and Saturday nights. You can show up for work, Monday thu Friday. When you are here on those days, your on my time. I can be your boss and can't speak to me like you do your friends out on the street, there's a certain level of respect l demand. If you know your going to be running late, please call and let me know
And if you don't it will be consequences. So any questions comments about everything t went over, dress code will be black khakis pants. Comfortable shoes no sneakers
I prefer that they be shoes with the rubber soles at the bottom. The uniform tops are pink and black
Please guys, l don't want you coming in here
Wearing pants hanging off your ass, you come up and get your shirts hats and the employee handbook. Lena said
