Sees Mirabel as a little sister (I have no evidence for this except for he's the only one who in a geniunely concerned tone asks her if everything's okay during the proposal dinner)
Adding to that, I headcannon that when Mirabel went out to town by herself shortly after her ceremony, she was being made fun of and before Dolores could get there to stop them, he got there and stopped them for her. That incident made Dolores aware of him and the feelings just grew.
Now he still keeps an eye on Mirabel every time she's in town, just in case.
Was promised to Isabela when he was sixteen.
Didn't know Isabela that well, but always wanted to be a husband and father so he was sure true love would come for the both of them

Gets lost in Casita and when he does he just sits and waits for someone, usually Dolores or Mirabel, to find him and lead him back to where he needs to be.
