Some of these are well known and some of these I made up, if you need me to explain I will.

Real Life: Member of a well off family of famous people, her claim to fame is that she is a world famous chef and is technically a doctor, though she focuses more on the cooking than the medicine nowadays.

Reverse: Pepa's gift. After her sister vanished, there has never been a storm in Encanto, trying to keep up the illusion that all was well for her sobrinas. It only rained at night when Julieta couldn't handle it anymore.

Harry Potter: Hufflepuff. A pureblood, but she married a muggleborn Hufflepuff so she never cared about keeping that blood pure, despite what her mother may say about it. 

Hero: Angelita. Basically what she does is stay behind the scenes in case some other hero needs her to heal them. Her suit, not that she really needs one, is a pale blue sundress printed with mixing bowls and kitchen utensils, and a mask just in case, always on the scene just as the battle is ending.

Mermaid: A freshwater mermaid. She is a siren but hates to use her voice. She uses it so her mother won't get on her but she always tries to rescue the humans she led to their death. Now that she's a mother, she refuses to use her voice. 

Apocalypse: She wouldn't survive. Not because she's weak but because of her self sacrificial tendencies.

Soulmate: Feel other's pain. Julieta would be grateful she has the booth because sometimes the pain is unbearable and she can't heal it on her, but once her soulmate is healed than it goes away. Needless to say she lectures Agustin quite a bit when she figures it out.

Bruno took Mirabel: She would become withdrawn. She'd still make arepas and empanadas and other food for the town but she refuses to leave Casita, making Agustin man the stand. She draws how she imagines Mirabel would look throughout the years and when Antonio reunites the two, she hugs her so tightly she almost rivals Luisa.

Mirabel's dead: She would not believe it at first, trying so hard to heal her, searching for some of the food that she made before Casita collapsed, crying, and running to escape the guilt that her daughter was one that she couldn't heal. Bruno hugs her as he leads her back to the rest of the family that need her but she refuses to talk to Alma again.

Monster: She is a  witch, which means she has green skin, but it's smooth green skin, and wears a blue witch hat and raggedy hemmed blue dress. She found the human and insisted on raising her, doing her best to make less witchy concoctions for the child to eat, and teaching her how she makes the potions even if the human can't.
