These are just some simple, healthy snack recipes for studying!

Frozen Yogurt Covered Blueberries

-

❊Blueberries

❊Greek Yogurt

-

1) Start by washing your blueberries and lining a small baking sheet with parchment or wax paper.

2) Using a toothpick dip each blueberry into the Greek yogurt and swirl until the blueberry is nicely coated with yogurt. Place on baking sheet. Continue the until all blueberries are coated.

3) Place baking sheet into freezer, and let freeze for at least an hour.

NOTE: Be CAREFUL walking to the freezer. I tripped and spilled some blueberries.

4) After about an hour your Frozen Yogurt Covered Blueberries can be placed in a ziplock bag and stored in freezer. Enjoy :))

Raspberry Mango Smoothie

❊ 1 cup frozen mango chunks

❊ 1 cup frozen raspberries

❊ 1 browning banana

❊ 1/2 cup of milk (of any milk you prefer!)

1) Blend all together in a food processor until smooth

2) Pour into a cup and enjoy! :))

Peanut Butter, Strawberry, & Banana Quesadillas

-

❊ 2 tablespoons natural creamy peanut butter

❊ 2 whole grain tortillas

❊ 1 large ripe banana, sliced

❊ 4-5 strawberries, sliced

❊ 1/8 teaspoon cinnamon (if desired)

1) Heat a medium skillet over medium high heat and spray pan with cooking spray.

2) Spread 1 tablespoon of the peanut butter evenly over each tortilla. Arrange both the banana and strawberry slices over on tortilla, sprinkle with a pinch of cinnamon, and top with the remaining tortilla, peanut butter side down. Press gently to help them stick together.

3) When the skillet is hot, add the quesadilla, flipping once, until golden brown, about 2 minutes per side. Cut each quesadilla into halves or quarters. Enjoy ;))
