Fall Recipe~ Carmel Salted Apple Hand Pie

▸ Pies! I usually can't eat pies but this one just sounds so yummy and amazing to try :) Better keep reading this if you want to drool your tongue off.
Servings: 10 (3 inch) hand pies
Prep Time: 1 hour (along with chilling time)
Cook Time: 15 minutesIngredients
Dough:
• 2 cups of all-purpose flour
• 1/2 teaspoon salt
• 1/2 teaspoon of backing powder
• 1 cup (2 sticks) cold unsalted butter (cut into cubes)
• 1/2 cup of cold sour creamFilling:
• 2 cups small diced (peeled) Granny Smith's Green Apples
• 2 teaspoons of fresh lemon juice
• 1/2 teaspoon of cinnamon
• 1/4 cup of sugar
• 2 teaspoons of all-purpose flour
• 8 store bought soft caramels, roughly cut
• Large flake sea salt
• Egg wash (1 egg whisked with 1 tablespoon of water)
• Crystal sanding sugar (optional)Directions
Make the Dough:
1.| Whisk together the flour, salt and baking powder in a large bowl.
2.| Add the cubed butter to the bowl and use your fingers to work the butter and flour together until it's a moist and feels like wet sand.
3.| Stir in the sour cream (the dough will become wet) the n turn the dough on a well floured surface.
4.| Knead the dough a few times until it comes together. Add more flour when necessary, 1 teaspoon at a time of the dough is too sticky to deal with.
5.| Roll the dough into an 8x10-inch rectangle and dust both sides with flour before folding it into thirds, as if your were folding a letter. Place in refrigerator.
Filling
1.| In a small bowl, combine apples, lemon juice, cinnamon, sugar, and flour, stirring together until fully mixed. Set aside.
Pie Making Time
Preheat oven to 425°F
1.| Remove the dough from fridge, unfold it and roll it to a 14x14-inch square.
2.| Using a 3-inch cookie cutter or a cup, cut out as many pies you can/desire. Re-roll the dough out to make more circles. You should have an even number of circles (hopefully 20)
3.| Place 6 of the circle on parchment paper-lines cookie sheet. Spoon a small portion of filling and place it in the center of a circle. Decorate the top of the filling with some chopped up caramels and a pinch of salt. Place a second circle over the filling, using a fork to crimp and pouch up the filling. Do this with all the pies and make sure the sides are secure.
4.| Brush each pie with egg wash then slice a couple cents at the top of the pie. Sprinkle the pies with some crystal sanding sugar (optional)
5.| Bake the pies for about 15 minutes or until they're golden brown. Continue on with the previous directions for the rest of the dough circles and filling.
6.| Remove the pies from oven and wait about 5-10 minutes to cool before serving.
Notes
1.| The apples should be cubed and no larger than a kettle corn. They brown up fairly quickly.
2.| If the dough is too firm to work with after refrigerating, let the dough sit in room temperature for about 10 minutes.
3.| If the sour cream becomes too sticky at any point during the rolling process, sprinkle some flour over the spot and carry on.
