A Saiyan like Nappa would be enough to defeat Omni Man. The average Saiyan is planetary level. Someone while Omni Man is continental, Piccolo was able to destroy the moon at a power level of 400 (Which would be multi continental)

In a way Viltrumites also gain zenkai boosts. Their bodies heal on their own. They become stronger by surpassing their limits (and grow stronger the more they age). Combine that with Saiyan DNA and you'll have a being able to rule the universe.
Also, I am aware that when it comes to half Viltrumites, they eventually become NEARLY a full blooded Viltrumite. Saiyan DNA would work perfectly because low amounts of DNA could make the offspring a Super Saiyan. This can be seen in Goku Jr in Dragon Ball GT, keep in mind that he is 1/16th Saiyan and is still able to go Super Saiyan.
