Carrot cake /cupcakes

INGREDIENTS:
3 eggs
1 cup granulated sugar
3/4 cup oil
1 1/2 cups flour
3 tsp baking powder
1/2 teaspoon bicarb
Pinch salt
2 tsp cinnamon
2 cups grated carrots
3/4 cup walnuts
1/4 cup water [I used hot water]

DIRECTION:
Beat eggs and sugar until light and fluffy
Add in oil and beat again
Add in sifted dry ingredients...
Fold in carrots and nuts
Add water and mix

Bake until done....
For a cake bake for 35-40 mins
