Jace
First and foremost the two of you would be sleeping in when you had that rare day off. Just spending the morning in bed sleeping or just cuddling would be first on the agenda. I feel like Jace wouldn't want to skip out on a day of exercising so that would be a must, and of course he would drag you along to the training room with him. Walking around the city and eating at different restaurant would be a frequent occurrence on your days off just so that you could get away from the institute for a while.
Alec
Since Alec's the head of the New York Institute he didn't really have any free time at all, but you would force him to take a break once in a while so he didn't literally work himself to death. The times you did manage to get him to leave the office you would always leave the institute and drag him away to the countryside or anywhere that was away from the city center just so that the two of you could be alone without the stress of the everyday life following you.
Simon
Yours and Simon's free time would obviously be spent cuddling while watching movies or playing video games as it was something that relaxed you both. It didn't matter what movie or what game was on the agenda so long as the two of you were alone with each other with a tv in front of you.
Magnus
Both you and Magnus enjoyed exploring the world and traveling to different exotic locations, so it would be no surprise that whenever you had the time to spare Magnus would conjure up a portal and whisk you off on your new tropical adventure. However, just spending time together at his loft was something the both of you enjoyed doing as well.
Raphael
Since Raphael was a vampire and couldn't be out during the day, you would spend the nights roaming about the city while everyone else was asleep. You both really enjoyed just walking about the deserted parks and streets and just enjoying the silence, as if you two were the only people left on earth.
Clary
Much like with the Jace one, you and Clary would like to spend your days off away from the institute and all of the reminders of what would await you when the day was over. Therefore you and Clary would often buy some pastries and coffee and head of the Central Park to have a little picnic. Sometimes she would bring a sketchbook and draw you and other times you would just walk hand in hand around the park and feed the ducks.
Isabelle
Self care, Isabelle is big on self care and whenever the two of you had the time you would book an appointment at a spa or the hairdresser and just spoil yourselves for the day. There was nothing better than soaking in a hot tub with your girlfriend with a glass of champagne in your hand after having had a facial done.
Maia
Since both you and Maia are big animal lovers you would often volunteer at local shelters. So when she was off work and you didn't have to help Magnus or your friends with whatever new threat was looming around New York you and Maia would be spending your days volunteering and cuddling with all the cute animals the sheltered had recused.
Jordan
You and Jordan would escape the city and head for the beach every time you had the opportunity to do so. You would steal Simon's van and drive to the nearest beach where you knew the waves would be big enough to surf. And Jordan would of course be your personal trainer and teach you everything he knew about surfing just so that you would be able to learn too. Nothing could beat the smell of the sea and the sun beating down upon the two of you as you rode those waves.
