Servants carrying porcelain, silverware, and crystal scamper to and fro the polished wooden floors of the comedor at Casa Alvize. Garlands put together from rosal leaves, woven with pink ribbonettes adorn the pillars. White tapered candles are being mounted on polished brass and crystal chandeliers. As every plate utensil, and glass is laid upon the crisp table linen in clockwork fashion that is all too familiar to the servants moving down the length of the tables, the sound of slicing, pounding, simmering, and searing from the kitchen serves as the music to this dance.

Doña Consuelo:
Culang ang mga ito, Diday! Hindi masarap ang lechon cung caunti lamang ang tanglad!

With the usual sounds from the rush in the cucina, Doña Consuelo's high strung voice is counterpoint above them, as she inspects each and every ingredient as it is being prepared before it ever touching the flames.

Kitchen Maid:
Magpapa-taglay pa po aco, Señora.

The servant responds from behind her mistress.

Doña Consuelo turns around, with a single eyebrow raised, looking at the kitchen maid from head to foot. The maid is turn is frozen on the spot.

Doña Consuelo:
Dali! Ano pang hinihintay mo? Anong oras na? Ypag-utos mo na sa canila sa baba!

She commands her.

Doña Consuelo:
Cailangan mai-lagay yan sa loob ng lechon para mas lumasa!

Frustrated with what seems to her as a lack of urgency, Doña Consuelo notices another kitchen maid slicing vegetables the wrong way.

Doña Consuelo:
Hindi ganiyan ang pag-hiua niyan. Pa-taguilid at manipis. Sinasayang niyo ang gulay!

Cecilia hurriedly shuts the door behind her as she hurriedly enters Narcisa's room.

Narcisa, taken by surprise, pulls away the writing instrument from the page she is writing on.

Narcisa:
Guinulat mo naman aco, Cecilia.

She tells her while flipping the leather bound booklet shut.

Cecilia:
Nacaca-rindi ang Tia Consuelo.

Cecilia starts while stepping away from the door.

Cecilia:
Lahat na lamang nacuicuita! Uala yatang utusang hindi napag-sabihan mali ang guinagaua nila, uala na yatang alicaboc na di pinagpag at ytinaboy palabas, at cahit daga magta-tago sa lungga niya masilayan lang ang saya ng Mamâ mo ngayong umaga.

They both chuckle.

Narcisa:
Nasaan na ngayon si Mamâ?

Narcisa asks.

Narcisa and Cecilia are used to Doña Consuelo's high strung manic bouts of perfectionism when it comes to preparing her parties.

Cecilia:
Ang mga utusan sa cucina naman ang nilalatigo niya sa casalucuyan.

She takes the seat right across Narcisa.

Cecilia:
Ano bang napapala mo sa cacasulat riyan?

She asks her cousin upon noticing the diary on the table.

Cecilia:
Sino naman caya ang mangangahas na magba-basa ng mga caganapan sa iyong tala-arauan?
