Ingredients:-
Chicken - 12 pcs.
Yogurt - 1/2 kg.
Ginger garlic paste - 2 tbs.
Red chilli powder - 1 & 1/2 tbs.
Coriander powder - 1 tbs.
Cumin roasted & crushed - 1/2 tsp.
Garam masala - 1 tsp.
Nutmeg powder - 1/2 tsp.
Mace powder - 1/2 tsp.
Salt - 1 tbs or to taste.
Lemon juice - 4 tbs.
Yellow food colour - 1/4 tsp.
Oil - 1 cup.
Onion sliced - 1/2 kg.
Tomato sliced - 2-3 medium.
Aloo bukhara - 6-8.
Green chillies slit - 5-6.
Coal for smoke.
Mint leaves - 1 bunch.
Basmati rice - 1 kg soaked, 30 minutes.
Pre boiled with lemon juice, salt & whole spices.Lemon juice - 1 tbs.
Salt - 2 tbs.
Cinnamon sticks - 2.
Bay leaf - 2.
Cloves - 2-3.
Onion fried.
Ginger julienne.
Yellow food colour - 1/2 tsp dissolved in 2-3 tbs water.
Method:-
Boiled rice, with lemon juice, salt, cinnamon sticks, bay leaves, & cloves....
Boil until 3/4th done, strain & set aside......
In bowl, add chicken pieces, yogurt, ginger garlic paste, red chilli powder, coriander powder, cumin, garam masala powder, nutmeg powder, mace powder, salt, lemon juice, yellow food colour, mix well & marinate for 2 hours.....
In pot, add oil, onion, & fry until brown, take out half of the fried onion & set aside.....
Add tomatoes & mix well....
Add dried plums, green chilli, & mix well.....
Now add marinated chicken, turn off the heat & give a coal smoke for 3 minutes then remove coal.....
Turn on heat, mix well , cover & cook on low flame for until chicken is done ( 8-10 minutes)......
Add mint leaves, mix well & cook on high flame until oil seperates.....
Add boiled rice half, fried onions, remaining boiled rice, fried onions, food colour dissolved in water & ginger, cover & steam cook on low flame for 10 - 15 minutes.....
Smoky chicken biryani is ready, serve with raita.....
