Ingredients:
- 1/4 cup cup butter
- scant 1/4 cup sugar
- 1 egg, separated
- 1 teaspoon almond extract
- scant 2/3 cup all-purpose flour
- scant 1/4 cup ground almonds
- scant 1/4 cup sliced almonds
- jelly of your choice
Directions:
1. Lightly grease a baking sheet. Cream the butter and sugar together until light and fluffy. Beat in the egg yolk and almond extract. Work in the flour and ground almonds to form a firm dough. Add a little extra flour if the mixture is too soft.
2. Divide the dough in half and roll each log about 10 inches long. Place on the prepared sheet.
3. Lightly beat the egg white with a fork and brush over each log. Lightly crush the almonds and press into the logs. Flatten each log slightly. Use the handle of a wooden spoon to press a channel down the center of each log. Fill the hollows with jelly. Let chill for 30 minutes.
4. Pre heat the oven to 350 degrees fahrenheit.
5. Bake the logs until pale golden brown, 10-12 minutes. Leave on the baking sheet until the jam has set but the dough is still warm. Cut diagonally into slices and transfer to a wire rack to cool completely.
