Ingredients
-6 oz Olive Oil
-1 oz Compressed Yeast
-4 oz Sugar
-4 oz Salt
-3 quart Water
-8 quart High Gluten Flour
Directions
1. Add all ingredients except the flour and compressed yeast into a 20 quart mixing bowl and mix to combine by hand.
2. Put the bowl in the machine and mix. Add the flour and mix until it forms into dough.
3. Mix the dough for 11 minutes.
4. Remove dough and scale into 22 oz balls. Coat with olive oil and hold for service.
