Ingredients:
- 1 cup unsalted butter
- 1/2 cup dark brown sugar, firmly packed
- 1 egg white
- 1 3/4 cup all-purpose flour
BUTTERSCOTCH CREAM
- 2 tablespoons butter
- 1 tablespoon cream
- 1 cup golden confectioners' sugar, sifted
GLAZE
- 7/8 cup golden confectioners' sugar
Directions:
1. Pre heat the oven to 350 degrees fahrenheit. Beat the butter and sugar together until light and fluffy. Beat in the egg white. Sitr in the flour and mix well.
2. Spoon the mixture into a pastry bag fitted with a 1/2-inch star tip and pipe eighteen 3 1/2-inch long fingers on lightly greased baking sheets.
3. Bake for about 8-10 minutes or until lightly browned. Cool on a wire rack.
4. To make the glaze, put thé confectioners' sugar into a small bowl and add enough water to mix to a pouring consistency.
5. To make the filling, put the ingredients into a bowl and beat together until smooth. Sandwich the biscuits together with a little of the butterscotch cream.
