Making cheesecake may be considered
to be a daunting task to some. There is
a tendency to over/under bake and over-
mix this decadent desert. However, it is
possible to avoid these mishaps.

Firstly, cheesecake recipes may differ.
I've worked in places where their recipe
just requires three basic ingredients;
sugar, cream cheese, and eggs. And I
have also handled recipes that required
more. However, I believe that no matter
what happens to go in; always add the
eggs last - carefully.

Cheesecake batter tends to become
overmixed because the eggs inside
becomes overmixed. Too much air
incorporated into the batter can lead
to cracks forming on the top of the
cheesecake when baked. If you add
them last, there's a chance you can
avoid this.

Now, some people may have that
unfortunate tendency to either over-
bake or underbake their cheesecake.
To avoid underbaking, keep the oven
temperature low. Also, keep in mind
to bake your cheesecake in a water
bath. This way, the steam from the
water will still be present to aid in a
more even baking process.
