•| ⊱ Raspberry Mint Curd ⊰ |• ➥ Raspberry, pureed —-- 200g ➥ Sugar —------------------- 300g ➥ Eggs —--------------------- 6 pcs ➥ Vanilla Bean pod —----- 1 pc ➥ Mint —---------------------- 5-6 pcs ➥ Butter —-------------------- 140g
➷ ᴛɪᴘ: When forming the "tart" shells, try using mini muffin liners. Place the liners inside the formed tart and fill it with either baking beans or rice. Then bake part way - just enough so the shape holds and it won't slide down or puff up. Once the liners are removed, then finish baking your tart shells the rest of the way.
