It's no surprise that these pretty little treats
are intimidating to make. Even an baker of
experience can have some difficulties.
There are many variables to consider when
attempting to make them. The temperature
and humidity of the area that you're working
in, are two factors that contribute to how the
product will turn out. Also, when flavourings
are added to the batter, be cautious because
adding any additional liquid may throw off
the recipe and how the batter will turn out.
The way that I have learned to make macs,
stems from the previous employers that I
have had the pleasure of working with.
That process consisted of mixing the recipe
in batches."Part A", would consist of the dry
ingredients and egg whites, while; "part B",
would consist of the egg whites and syrup.
In my opinion, adding the syrup to the whites
is the most challenging step in this process.
A helpful tip would be to either; make sure
your eggs are at room temperature or heat
your egg whites over a double-broiler (mixing
continuously) until it becomes warm. Then,
transfer them to the mixing bowl and whip
as your syrup is heating in a pot on the stove.
It has to reach a certain temperature before
adding it to the eggs. Once done, you would
whip the eggs until they are stiff and shiny.
The next aspect that some wouldn't think to
be challenging, would be piping. Yes, the
technique used when piping will definitely
affect the appearance of your macarons.
It is best to use a round tip and to hold
your piping bag so that it is positioned
vertically straight. And when you want
to stop, rather than making a dollop on
top, you want to avoid making a point.
So, you want to - in a way - cut it off by
Quickly releasing and pulling away from
the piped macaron. Although, that process
is easier to show rather than try to explain.
