Also called "choux paste", is a type of
dough, originating from France, used
to make a variety of different pastries.
Although most commonly, it is used in
the making of profiteroles and eclairs.
Choux paste is pretty simple to make
and it uses only a handful of ingredients
that you don't have to go out of your
way to obtain. Flour, water, eggs, and
butter are the main components.
Though, you may include other additives
such as flavouring; i.e., salt and sugar.
First, you would place all the ingredients,
except the flour and eggs, in a pot and
heat it until the butter has melted and just
as it starts to boil. Then, add in all the flour
and stir quickly to make sure the flour is
mixed in well and evenly before it starts
to burn. And just as it pulls away from the
sides of the pot, you'd take it off the heat
and set the dough in the mixer with a
paddle attachment and mix until it is cool.
Once it is, add the eggs in slowly. In this
step, you want to make sure that you
mix the dough well enough that stiff
peaks form. This way, when you go
to pipe your confections out and bake
them, their shape will hold much better.
