INGREDIENTS:
1 kg of beef, chopped into equal pieces
2 large tomatoes, skinned
1 large onion, chopped
1/2 green pepper, cut into juliennes
1/2 yellow pepper, cut into juliennes
1 teaspoon of curry powder, of your choice
1 teaspoon of salt to taste
1 cup of beef stock
1 cup of fresh coriander, finely chopped
1 aubergine, chopped into cubes
1/2 cup of tomato paste
1 carrot, chopped
Ginger, finely chopped
2 tablespoons of oil, any of your choice
2 irish potatoes, chopped into slightly big pieces (optional)METHOD
Chop the beef and put in a pan, add some water and cook for 30-40 minutes on a high flame.Remove water and add oil to the beef and let it burn for about 7 minutes.
Once it shows a slight brown color, then add onions, ginger and garlic and stir carefully.
Add the irish potatoes and stir for a bit, then add the peppers and stir too.
Add the curry powder and saute for 2 minutes, then add the tomato pieces, cover and let it boil.
Add the aubergine and carrots and the tomato paste and let it simmer for a bit.
After about 5 minutes, add the beef stock and let it simmer for about 30-40 minutes on a low flame.
Bring the coriander to a boil and mix well then remove the beef from fire.
Best served hot with steamed green bananas( matooke) or pilao or white rice or vegetable rice or chapatti (flat bread)
