~Coconut Bean Soup~

INGREDIENTS:
1/2 cup of onions, finely chopped
1/2 cup of green peppers, finely chopped
1 teaspoon of curry powder
1 teaspoon of salt
1/4 teaspoon of pepper
3 tablespoons of margarine or butter
1 cup of fresh tomatoes cut into 1/2 inch pieces
21/2 cups of kidney beans
2 cups of coconut milk
3 cups of water
1/2 cup of cooked rice or soaked

METHOD:
Add onions, peppers, curry powder, teaspoon of pepper in 3 tablespoons of margarine or butter and cook until soft but not brown.

Add tomatoes, salt and simmer for 2 minutes.

Add the beans, coconut milk, water and leave to simmer gently for 10 minutes.

Then add the cooked rice, correct the seasoning to your taste.

Garnish each bowl with a teaspoon of shredded coconut.
Serve 1 cup portions in soup bowls.
