~Meat in groundnut paste~

INGREDIENTS
500g dry meat
200g groundnut paste
1 onion
2 tomatoes
1 litre water
Salt

METHOD
If the meat is not properly dried, wipe and dry the meat under the grill or on charcoal stove. It should be completely dry

Cut the meat into small pieces

Chop the onions and cut the tomatoes

Put the meat, onions and tomatoes in a pan

Add water and salt

Cook for 30-45 minutes till the meat is tender

Blend the ground nut paste with warm water or use the cooking liquid if much is remaining in the meat.

Add the thinned ground nut paste to the meat and mix well adding water if too thick

Leave to boil for further 15 minutes and correct the seasoning

Serve hot with a staple.
