This is a northern Uganda food recipe.... And also one of my favorites... Honestly I like this sauce and I didn't even know what it was called at the time 😂
INGREDIENTS:
¼ kilogram (1/2 pound) of chopped ebbo, or cowpea leaves. Spinach is a good substitute too
¼ kilogram (1/2 pound) simsim, or sesame paste
4 okra pods, chopped
1 tablespoon of salt
½ liter (2 cups) of water
Serves 2-3 people
METHOD
Remove the leaves from the boo, or cowpea plant and wash them with water
Place the leaves in the sun for 30 minutes to dry out, making it easier to remove any soil. If there is no sunshine, gently hit the leaves to remove any soil
Chop the boo leaves into bite-sized pieces
Put the water in the saucepan on the stove, add the rock salt and bring to a boil
Add the boo leaves and the okra to the boiling water and cook for about 15 minutes. Check the pot frequently and look for a change in the color of the sauce. It should take on a yellow hue, which is an indicator that you added the right amount of rock salt
After the color is achieved, add the simsim paste
Reduce the heat and allow the sauce to simmer until it develops a thick texture
Add salt if necessary and keep stirring, to avoid burning the sauce, until the dish is ready
Serve with bread or a starch of your choice
