~Garden Egg & Aubergine Stew~

INGREDIENTS

3 cups of garden eggs, cleaned, chopped into moon shapes
1 large aubergine, cleaned, chopped into cubes
2 large tomatoes, cleaned, chopped
1 shallot, chopped finely
Oil to fry
Salt to taste
Water

METHOD

In a pan put the garden egg pieces and aubergine pieces and a little water and leave to simmer over a medium heat for 40 minutes

Then add the tomatoes and onions and mix, add salt to taste, add more water if you please

Leave to simmer for 20 minutes to cook thoroughly

When ready serve with steamed rice or bean stew.
