INGREDIENTS
1 cup of boiled kidney beans
1 large onion, chopped in juliennes
1 large tomato, chopped into cubes
1 medium size green pepper, chopped in juliennes
1/4 teaspoon of cumin powder
1/4 teaspoon of ginger powder
A pinch of turmeric
1/4 teaspoon of garlic powder
2 large cucumbers, chopped into cubes (chop and put into a refrigerator)
2 lemons, juiced
Salt to taste
Oil to fry
WaterMETHOD
In a pan, add oil over a high heat, when oil is heated add the chopped onion pieces and sauté, add the cumin, garlic and ginger powder and saute with the onions
Add the peppers and mix well with onions
Add the chopped tomatoes and sauté with the cooked veggies, leave to cook for 2 minutes
Add the turmeric powder, sauté and leave to cook for 1 minute
Add a cup of water, salt to taste and let it simmer for 5 minutes
In a plastic cup add two tablespoons of royco or soup thickener, add little water to it and mix well til royco dissolves
Add the beans to the soup and mix, taste to check if salt is okay
Add the royco mixture and mix well.... Let it simmer for about 15-20 minutes
When ready add the chopped cucumbers and lemon juice and mix well, leave to rest for 5 minutes
This soup can either be served hot or cold.... It is your choice ♥
