INGREDIENTS
1 kg potatoes, boiled
6 eggs, boiled
1 tablespoon butter or margarine
1 cup bread crumbs
2 cups oil for frying
2 eggs, beaten

METHOD
In a bowl add the boiled potatoes then add the butter and smash the potatoes till smooth, when done put aside.

In a pan cook the eggs. When done leave them to cool a bit.

Get each egg and around it add potatoes. Then roll the ball in the eggs for a coating, then roll it in the bread crumbs. Do that for each egg and put aside.

In a pan add the oil and leave it to heat, when heated put the egg rolls according to the size of your pan, cook on each side for slightly 2 minutes till turns golden brown.
Best served hot.
