INGREDIENTS
2 cups of ground-nut powder or paste
3 cups of finely chopped red amaranth leaves, cleaned
1 shallot, finely chopped
1 medium sized tomato, finely chopped
Hot water
Salt to tasteMETHOD
Make sure the red amaranth leaves are cleaned of any soil or stones.In a pan add g.nut powder and add hot water and stir till all g.nut paste blocks are dissolved into the hot water.
Add the red amaranth, the onion and tomatoes to the sauce and stir til everything is mixed together.
Add the salt to taste and cook over a medium heat source til the sauce starts bubbling. When the sauce starts bubbling then it is ready.
This meal is best served with matooke, posho, pilau.
