a Recipe by Jake Nobello
Ingredients:
2 celery sticks, finely chopped
1 Large Carrot Chopped
1 onion, finely chopped
1 teaspoon turmeric powder
1 teaspoon ground coriander
1/2 teaspoon black pepper
1 teaspoon spicy oil (e.g., chili oil or any hot sauce of your choice)
2 tablespoons olive oil
1 tablespoon butter
1 lemon, peeled and cut into small cubes
1 tablespoon rice wine vinegar
2 cloves
1 small cinnamon stick
200g ground beef
200g ground pork
1/2 cup grated cheddar cheese
For the Pita Bread:
2 pita bread rounds, chopped into quarters
Butter
Dill weed
Lemon juice
Instructions:
In a frying pan, add the finely chopped celery sticks and onions.
Sprinkle the turmeric powder, ground coriander, black pepper, and spicy oil over the celery, carrots and onions. Add the olive oil and butter to the pan.
Toss in the sliced lemon cubes, rice wine vinegar, cloves, and cinnamon stick.
Roast the mixture on medium heat until the onions and celery turn golden and aromatic. Set aside.
In a mixing bowl, combine the ground beef and ground pork.
Add the grated cheddar cheese to the meat mixture and mix well until evenly distributed.
Shape the meat mixture into teaspoon-sized meatballs.
Place the meatballs into the saucepan with the roasted celery, onions, and spices.
Cook the meatballs in the saucepan, turning them occasionally, until they are no longer pink in the center.
Once the meatballs are cooked through, turn off the heat and cover the saucepan with a lid. Let it sit for 3 minutes to allow the flavors to meld.
Preparing Pita Bread:
Preheat your oven to 350°F (180°C).
Lay the chopped pita bread quarters on a baking sheet.
Spread a thin layer of butter on each pita quarter.
Sprinkle dill weed and drizzle lemon juice over the buttered pita quarters.
Toast the prepared pita bread in the oven for about 2 minutes or until they become slightly crispy.
Serve the zesty turmeric meatballs with the toasted pita bread, and enjoy the delicious combination of flavors! You can also add a side of yogurt sauce or any other dipping sauce of your choice for an extra burst of flavor.
