Ingredients:
1/2 cup butter
3/4 cup brown sugar
2 large eggs
5 large bananas
2 cups all-purpose flour (or whole grain)
1 tsp baking soda
1/4 tsp table salt
Add 2 shakes of: cinnamon spice, allspice (optional)
Add a few drops of vanilla extract (optional)
1/4 cup semi-sweet chocolate chips (optional, mix in half and sprinkle the rest on top)
Instructions:
Preheat the oven to 375°F (190°C).
Grease a bread pan or a 9x9 pan, or line it with parchment paper.
In a mixing bowl, cream together the butter and brown sugar. Add the eggs and mashed bananas. Mix well.
In the same bowl, add the flour, baking soda, and salt. Mix until just combined.
If using chocolate chips, fold in half of them into the batter. Sprinkle the remaining half on top (optional).
Pour the batter into the prepared pan. Bake for about 65 minutes or until a toothpick inserted into the center comes out clean. Check at 55 minutes.
Allow the banana loaf to cool in the pan for a bit before transferring it to a wire rack. Once completely cooled, slice and enjoy!
