Ingredients:
2 cups whole wheat flour
1 cup all-purpose flour
1/2 cup rolled oats
2 tablespoons flax seeds (optional)
1 packet (2 1/4 teaspoons) active dry yeast
1 1/4 cups warm water (about 110°F or 43°C)
2 tablespoons honey or maple syrup
2 tablespoons olive oil or melted butter
1 teaspoon salt
Instructions:
In a bowl, combine warm water and honey. Sprinkle the yeast over the water and let it sit for 5-10 minutes until it becomes frothy.
In a large bowl, combine the whole wheat flour, all-purpose flour, rolled oats, flaxseeds (if using), and salt.
Add the activated yeast mixture and olive oil (or melted butter) to the dry ingredients.
Mix until a dough forms. Turn the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.
Place the dough in a lightly oiled bowl, cover it with a clean cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.
Punch down the dough and shape it into a loaf. Place the shaped dough into a greased loaf pan. Cover and let it rise for another 30-45 minutes.
Preheat your oven to 375°F (190°C).
Bake the bread in the preheated oven for 30-35 minutes or until it sounds hollow when tapped on the bottom.
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
