Ingredients:
1-inch fresh ginger, finely chopped
1-2 yellow onions, minced
1 carrot, thinly sliced
2-3 potatoes, diced
1-2 celery stalks, chopped
Pinch of oregano
1/8 tsp parsley
1/4 tsp basil
Pinch of cayenne pepper
Himalayan salt, to taste
Ground pepper, to taste
1 tbsp extra virgin olive oil
2-3 tbsp salted butter
1/2 cup water (to start)
1 can tomato soup
1-1 1/2 cans of water or milk
Instructions:
Prepare Vegetables: Finely chop the ginger, mince the yellow onions, thinly slice the carrot, dice the potatoes, and chop the celery.
Sauté Aromatics: In a pot, heat the extra virgin olive oil and salted butter. Sauté the ginger, onions, carrot, potatoes, and celery until the veggies are almost translucent.
Season: Add oregano, parsley, basil, cayenne pepper, Himalayan salt, and ground pepper. Stir well.
Add Liquid: Pour in 1/2 cup of water to start. Stir and let it cook for a few minutes.
Tomato Soup Base: Add the can of tomato soup and 1-1 1/2 cans of water or milk. Stir to combine.
Simmer: Let the soup simmer on medium heat until all the flavors meld together and the vegetables are tender.
Serve: Ladle the soup into bowls and serve hot.
