Ingredients:
1 white onion, finely chopped
2-3 stalks of celery, chopped
Olive oil
Butter
Cooked macaroni (quantity as per your preference)
5 medium potatoes, boiled and mashed
5-6 mushrooms, sliced
Chopped cilantro/parsley for garnish
Salt, pepper, and a bit of cumin to taste
White cheddar cheese, grated
Instructions:
In a pan, sauté the finely chopped white onion and celery in a mix of olive oil and butter until they become translucent.
Add sliced mushrooms to the pan and continue cooking until they are tender.
Season the mixture with salt, pepper, and a bit of cumin according to your taste preferences.
In a large mixing bowl, combine the sautéed vegetables with the cooked macaroni.
In the same pan, melt some butter, add flour to make a roux, and then slowly whisk in milk to make a smooth sauce.
Once the sauce thickens, add grated white cheddar cheese and stir until it's well combined and creamy.
Fold the cheesy sauce into the mashed potatoes. This adds a creamy texture to the dish.
Combine the cheesy mashed potatoes with the macaroni and vegetable mixture.
If you want a baked version, transfer the mixture to a baking dish, sprinkle with a bit more grated cheese, and bake until the top is golden brown and bubbly.
Garnish with chopped cilantro or parsley for a burst of freshness.
Serve hot and enjoy your delicious and comforting macaroni cheese!
