Ingredients:
1/2 white onion, chopped
Stem of celery, chopped
1/6 of a green pepper, chopped
2 tablespoons of extra virgin olive oil
2 tablespoons of salted butter
Salt, to taste
Pepper, to taste
Cumin, to taste
Thyme, to taste
1/8 - 1/4 cup of white rice
3/4 cup of water
2 eggs
4 slices of Brie cheese
Instructions:
In a frying saucepan, sauté chopped white onion, celery, and green pepper in extra virgin olive oil and salted butter until softened.
Season with salt, pepper, cumin, and thyme to taste.
Add white rice to the pan and stir until the rice is well-coated with the vegetables.
Pour in water, cover the pan with a lid, and let it simmer on medium heat for 5-8 minutes or until the rice is almost cooked.
Crack the eggs into the pan and stir, ensuring they are well integrated with the rice.
Place slices of Brie cheese on top of the rice mixture. Remove the pan from the heat, cover with the lid, and let it sit for a couple of minutes until the cheese melts.
Stir the melted Brie into the rice mixture, ensuring it's evenly distributed.
Serve your easy pan-fried rice hot and enjoy!
