Ingredients:
For the Roasted Vegetable Wedges:
4 carrots, cut into wedges
3 large yellow potatoes, cut into wedges
Olive oil
Chili spice, Dill spice, Parsley, Rosemary, Cajun spice
Himalayan salt, Ground pepper
Ground hemp/flax seeds
For the Pan-Fried Chicken and Veggie Mix:
2-3 cloves garlic, minced
1/2 white onion, diced
Handful of edible peas, cut in half
1/2 green pepper, diced
2-3 stalks of celery, chopped
Cooked roast chicken, chopped
Green pepper seeds, (optional garnish)
Chili spice, Dill spice, Parsley, Rosemary
Himalayan salt, Ground pepper
Cooked brown rice (optional)
For the Tzatziki Sauce:
Sour cream
Dill spice, Parsley, Cajun spice
Salt, Pepper
2 tbsp mayo
1 teaspoon fresh lemon juice
Instructions:
For the Roasted Vegetables:
Preheat your oven to 400°F (200°C).
In a large bowl, toss the carrot and potato wedges with olive oil, chili spice, dill spice, parsley, rosemary, Himalayan salt, ground pepper, and ground hemp/flax seeds until they are well coated.
Arrange the seasoned wedges on an oven pan and bake for 35 minutes. After 35 minutes, turn the wedges over and finish baking for an additional 10-15 minutes or until they are golden brown and tender.
For the Pan-Fried Chicken and Veggie Mix:
In a pan, heat some butter and oil over medium heat.
Add minced garlic, diced onion, halved edible peas, diced green pepper, chopped celery, and chopped roast chicken to the pan. Optionally, you can include green pepper seeds if desired.
Season the mixture with chili spice, dill spice, parsley, rosemary, Himalayan salt, and ground pepper. Stir-fry until the vegetables are tender and the chicken is heated through.
If desired, mix in cooked brown rice at this stage, and cook until it's heated through.
For the Tzatziki Sauce:
In a bowl, combine sour cream, dill spice, parsley, salt, pepper, Cajun spice, mayo, and fresh lemon juice. Adjust the seasoning to your taste. Place in the refrigerator until ready to serve with the dish. ( can use as dip or better yet pour sauce over the chicken and wedges and eat to your heart's desire)
Assembly:
Serve the pan-fried chicken and veggie mix alongside the roasted vegetables and a generous dollop of homemade tzatziki sauce. Enjoy your homemade Tzatziki Dish!
This homemade Tzatziki Dish should serve 3 to 4 people with moderately portioned servings or 2 to 3 people with hearty, full meals. Enjoy your meal, and feel free to adjust quantities and ingredients according to your preferences!
