Ingredients:
1 onion, finely chopped
2 celery stalks, diced
1 cup mushrooms, sliced
1 teaspoon Cajun spice (adjust to taste)
1/2 teaspoon coriander spice
1/2 teaspoon dill spice
Salt and pepper, to taste
1 cup cubed fresh pig lard or ham cubes (or substitute with cooked bacon or smoked turkey for a similar flavor)
1 can (15 ounces) mixed beans (e.g., a combination of kidney beans, black beans, and pinto beans), drained and rinsed
2-3 tablespoons maple syrup (adjust to your preferred sweetness)
1/2 cup water
Instructions:
Finely chop the onion, dice the celery, and slice the mushrooms.:
In a large saucepan or skillet, heat a bit of oil or butter over medium heat. Add the chopped onion, diced celery, and sliced mushrooms. Sauté until the vegetables are softened and slightly browned, about 5-7 minutes.
Stir in the Cajun spice, coriander spice, dill spice, salt, and pepper. Cook for an additional 1-2 minutes to toast the spices and enhance their flavor.
Add the cubed fresh pig lard or ham cubes to the pan. Sauté for a few minutes until they start to brown slightly.
Add the drained and rinsed mixed beans to the pan. Stir well to combine them with the other ingredients.
Pour in the maple syrup and water. Stir everything together to create a flavorful sauce. Adjust the amount of maple syrup to your desired level of sweetness.
Reduce the heat to low and let the casserole simmer for about 10-15 minutes, or until the flavors meld together and the beans are heated through.
Taste the casserole and adjust the seasoning, sweetness, or spiciness if needed. You can add more maple syrup or Cajun spice to achieve your preferred balance of flavors.
Once the casserole is heated through and well-seasoned, it's ready to serve. Spoon it into serving dishes and enjoy!
