a Recipe by Jake Nobello
Ingredients:
1 large white onion, finely chopped
4 stalks of celery, finely chopped
3 tablespoons of butter
2 tablespoons of extra virgin olive oil
1 rutabaga, peeled and thinly sliced
1/3 cup water
1 tablespoon honey
Salt, to taste
Pepper, to taste
A light shake of cayenne pepper
Instructions:
Finely chop the white onion and celery.
In a pan over medium-high heat, add butter and extra virgin olive oil. Sauté the chopped onion and celery until they are softened and slightly caramelized.
Add the thinly sliced rutabaga to the pan.
Pour in the water and honey. Season with salt, pepper, and a light shake of cayenne pepper. Stir well. Cover the pan and let the rutabaga steam and caramelize. Stir occasionally to ensure even cooking.
Cook until the rutabaga is tender but still retains a slight crunch. This usually takes about 15-20 minutes.
Once cooked, serve the savory rutabaga as a side dish.
Optional Sides:
Mix fresh salad leaves with extra virgin olive oil, white wine vinegar, and a touch of maple syrup.
Cook couscous with butter, salt, and pepper according to package instructions.
Enjoy your delicious and savory rutabaga dish!
