Ingredients:
1 1/2 cups all-purpose flour
1 cup brown sugar
1 cup butter
1/2 tablespoon baking soda
1/2 teaspoon salt
2 large eggs
2 tablespoons ground flaxseed
4 tablespoons crushed oatmeal
¼ cup Semi-sweet chocolate chips or milk chocolate chips
Instructions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the all-purpose flour, brown sugar, and softened butter. Mix until the ingredients are well incorporated.
Add the baking soda and salt to the mixture and continue to mix.
Crack in the eggs and add the ground flaxseed. Mix until the eggs are fully incorporated and the mixture is smooth.
Stir in the crushed oatmeal, which will add texture and a nutty flavor to your cookie cakes.
Add your desired amount of semi-sweet or milk chocolate chips to the dough and gently mix until the chips are evenly distributed.
Using a medium-sized ice cream scoop, portion out scoops of the dough onto the prepared baking sheet. Leave enough space between each scoop for the cookies to spread.
Dip a fork in a little bit of flour to prevent sticking, and then press down on each cookie cake with the fork to flatten it slightly. This will create a textured pattern on the surface of the cookie cakes.
Place the baking sheet in the preheated oven and bake for about 8 minutes or until the edges of the cookies are golden brown.
Once baked, remove the baking sheet from the oven and allow the cookie cakes to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
