Ingredients:
1 whole white onion, diced
1-2 minced garlic cloves
1 1/2 cups canned bean juice (from canned beans)
2-3 celery stalks, chopped
5-6 sliced mushrooms
1 1/2 cups cauliflower florets, small
Spices: Himalayan salt, ground black pepper, cayenne pepper (to taste)
1 can of mushroom soup
1 can of water
Instructions:
In a pot, sauté diced white onion and minced garlic until they are fragrant and softened.
Pour in the canned bean juice into the pot.
Add chopped celery, sliced mushrooms, and small cauliflower florets to the pot.
Season with Himalayan salt, ground black pepper, and cayenne pepper to taste. Adjust the spices according to your preference.
Stir in the can of mushroom soup.
Pour in a can of water. Adjust the water quantity based on your desired consistency.
Allow the soup to simmer on medium-low heat for about 15-20 minutes, or until all the vegetables are tender.
Ladle the Bean Broth & Shrooms Zoup into bowls and serve.
Optional:
Serve with garlic bread on the side for a complete and hearty meal.
