Chicken & Chickpea Stir Fry

Ingredients:

1/2 onion, thinly sliced

1/4 large green pepper, thinly sliced

1-2 celery stems, thinly sliced

5-6 mushrooms, sliced

1-1 1/2 cups canned chickpeas, drained and rinsed

1 chicken breast, chopped into bite-sized pieces

1 tsp hot jalapeno oil (adjust to taste)

2 tbsp olive oil

2-3 tbsp salted butter

Himalayan salt, to taste

Ground pepper, to taste

Dill spice, to taste

Parsley, to taste

Chili powder, to taste

Coriander spice, to taste

Ground flaxseed, to taste

Ground hemp, to taste

Instructions:

In a large skillet or wok, heat the olive oil over medium-high heat.

Add the sliced onion, green pepper, celery, and mushrooms to the hot oil. Stir-fry these vegetables until they become tender and slightly caramelized.

Push the sautéed vegetables to one side of the skillet and add the chopped chicken breast to the empty side.

Cook the chicken until it's no longer pink in the center, stirring occasionally to ensure even cooking.

Once the chicken is cooked through, combine it with the sautéed vegetables in the skillet.

Add the drained and rinsed canned chickpeas to the skillet and stir to combine all the ingredients.

Season the stir-fry with hot jalapeno oil for a spicy kick, or adjust the amount to your preferred level of heat.

Sprinkle in Himalayan salt, ground pepper, dill spice, parsley, chili powder, coriander spice, ground flaxseed, and ground hemp according to your taste preferences. These seasonings will infuse your stir-fry with a wonderful blend of flavors.

Stir-fry all the ingredients together for a few more minutes until everything is well combined, heated through, and seasoned to your liking.

Serve your Chicken Chickpea Stir Fry hot, garnished with fresh herbs if desired, and enjoy this nutritious and flavorful meal!
