MUFFINS

Self Raising Flour | 150g
Caster Sugar | 50g
Baking Powder | 1 Teaspoon
Milk | 150ml
Butter | 50g
Egg | 1
Chocolate Chips | 100g

< METHOD >

Light oven gas mark 5 or 190c. In a jug, measure the milk and add the egg then whisk lightly. In a pan, gently melt the butter. Allow to cool for 5 minutes (make sure the butter isn't hot or else it'll scramble the egg) then add to the egg & milk mixture.
In a mixing bowl, mix together the self raising flour, baking powder, caster sugar and chocolate chips, then gradually add the egg, milk, and butter mixture and mix together. Pour the mixture into muffin cases and fill them 2/3 full, then bake for 15-20 minutes until golden brown and firm to the touch.
