Sausages | 8
Yellow Pepper (Deseeded & Chopped) | 1
Red Onion (Diced) | 4
Chopped Tomatoes | 1 Tin
Vegetable Stock | 250ml
Basil | 1 Tablespoon

Light oven to gas mark 7 or 220c. Put the sausages, pepper and onion into a roasting tin, then roast for 20 mins. Lower oven to gas mark 6 or 200c, then tip tomatoes and stock over the sausages. Add basil and season, then stir well and roast for another 20 mins.
