BBQ CHICKEN PIZZA

Pizza Base;
- Strong White Bread Flour | 500g
- Warm Water | 300ml
- Dried Yeast | 10g
- Sugar | 1 Tablespoon
- Salt | 1/2 Teaspoon

Marinade;
- BBQ Sauce | 1 Tablespoon
- Brown Sauce | 1 Tablespoon
- Tomato Ketchup | 1 Tablespoon
- Honey | 1 Tablespoon

Sauce;
- Onion | 1 - Finely Chopped
- Garlic Cloves | 2 - Minced & Crushed
- Chopped Tomatoes | 1 Tin
- Fresh Oregano | 2 Tablespoons
- Olive Oil | 4 Tablespoons
- Salt & Freshly Ground Black Pepper

Topping;
- Leftover Cooked Chicken
- Grated Cheddar Cheese | 85g
- Black Olives | 9

< METHOD >

To make the Pizza base; place the flour into a large mixing bowl and make a well in the centre, now, into the well, please add the water, yeast, sugar, and salt, but remember to incorporate the flour into the mixture. Once the flour has been fully mixed with the other ingredients, place the mixture on a floured board and knead well for approximately ten minutes. Cover the dough with a light dusting of flour, place it in a bowl, cover with a clean cloth and leave it in a warm place for approximately thirty minutes, so that it can double in size, now, use this time to make the marinade.

To make the marinade; Mix together the BBQ sauce, brown sauce, tomato ketchup, and honey until well combined, and then add the leftover chicken, leave this in the fridge until its required.

Going back to the pizza base; once the dough has risen, knock out the air by kneading once more. Once you've done that, dust a baking tray with flour and press the dough into the tray, and once again, cover the dough with the cloth and leave it to rise for approximately thirty minutes, now, you can start working on the sauce.

To make the sauce; Empty the contents of the tinned tomatoes into a saucepan and heat gently; after it's been in heat for about one minute, please add the onion and garlic, then allow to simmer gently until reduced and quite thick, and season with the salt, freshly ground black pepper and the fresh oregano. Once you've let it sit for a minute, remove from heat and add three to four tablespoons of olive oil and stir well, and then remove from heat. However, now you should also preheat the oven to 180c.

Going back to the pizza base; once the dough has risen sufficiently, gently cover it with the sauce you've just prepared, but remember to not knock any air out of the dough. Once you've done that, chop the olives in half and add on top of the sauce, then add the marinated chicken and grated cheese. After that, put the pizza in the oven for about twenty-five minutes.
