FALAFEL BURGERS

Chickpeas | 400g
Garlic | 2
Ground Cumin | 1 Teaspoon
Ground Coriander | 1 Teaspoon
Chilli Powder | 1/2 Teaspoon
Plain Flour | 2 Tablespoons
Sunflower Oil | 2 Tablespoons
Toasted Pitta Bread
Tomato Salsa | 200g
Green Salad
Red Onion | 1

< METHOD >

Pat the chickpeas dry with kitchen paper, tip into a food processor along with the onion, garlic, spices, flour and a little bit of salt, then blend until fairly smooth and then shape into four patties with your hands.
Heat the oil in a non-stick frying pan, add the burgers, then quickly fry for three minutes on each side until lightly golden. Serve with toasted pittas, tomato salsa and a green salad.
