CREAMY CHICKEN & MUSHROOMS

Onion | 1

Mushrooms | 100g

Chicken | 250g

Oil | 1 Tablespoon

Milk | 250ml

Flour | 25g

Chicken Stock Cube | 1

Salt & Pepper

Peas | 25g

Sweetcorn | 25g

Cream | 3 Tablespoons

< METHOD >

Peel and chop onion, wash and slice mushrooms, cut the chicken into small pieces. Once you've prepared the vegetables and chicken, place oil in a saucepan, fry the onions and the mushrooms gently for five minutes until softened, add the chicken and continue to fry for five minutes until thoroughly cooked, stirring all the time with a wooden spoon.

Measure 250ml of milk in a jug, stir in the flour, chicken stock cube, peas, and sweetcorn, then pour the mixture in the saucepan and bring to boil, stirring until thickened. Allow to simmer for two minutes, then turn off heat and add any cream of your choice.
